Legume Chips in the Air Fryer

LEGUME CHIPS IN THE AIR FRYER like KALE CHIPS IN THE AIR FRYER are a healthy and appetizing snack. A recipe to make crunchy and tasty air-fried legumes. I used fava beans and, since I love spices and citrus, I decided to use dried lemon peels in the air fryer and pink pepper. Perfect to enjoy as a snack, also to bring to work. For this recipe, you won’t need to cook the dried fava beans — you just need to soak the legumes in the microwave. If you want to swap the dried fava beans for other legumes, I recommend using hulled varieties and soaking them the same way as the fava beans.

Ingredients

  • 3.5 oz dried fava beans (about 1/2 cup)
  • 3 pinches salt
  • 2 pinches pink pepper
  • 2 tsp extra virgin olive oil
  • 2 pinches lemon zest

What you need

  • 1 Air fryer
  • 1 Bowl
  • Air fryer parchment liners

Procedure

  • Spread the dried fava beans in a glass bowl, rinse them well until the water runs clear, then cover them with about 2 cups (500 ml) of fresh water. Seal the bowl with microwave-safe plastic wrap, pressing it firmly and without piercing it. Place the bowl in the microwave and run it at about 600 watts. When the plastic wrap puffs up like a balloon, turn it off. It will take about 6 minutes on average. Let rest for 20 minutes. Afterwards, discard the soaking water.

  • Drain the fava beans well and return them to the bowl. Season with salt, pink pepper, lemon zest and oil. Mix well.

    Line the bottom of the basket with a sheet of parchment paper and then spread the seasoned fava beans, avoiding overlap.

    Start cooking at 356°F for 10 minutes. After 7 minutes, shake the air fryer basket.

    Serve the legume chips from the air fryer; you can enjoy them hot or cold.

How to store legume chips

Once they have reached room temperature, place the chips in a small paper bag, then put that bag inside a food-grade plastic bag. This way the paper will absorb any residual moisture.
