- 3.5 oz smoked scamorza cheese

To make the Potato and Zucchini Cake in Air Fryer
Start by cooking the potatoes with their skins in boiling water for about 40 minutes or until they are soft enough. Then peel the potatoes and mash them using a food mill or other utensils.
Next, add the egg, salt, diced salami, and chopped smoked scamorza cheese to the potatoes. Finally, mix everything evenly.
At this point, take the zucchini, remove the ends, and slice it thinly using a vegetable peeler.
Then take a medium-sized baking dish and grease the bottom with extra virgin olive oil, then cover it with the zucchini slices, leaving about half of each slice outside. Complete by filling the entire content with the seasoned potatoes.
Proceed by folding all the zucchini slices inwards and add more slices if necessary to cover any exposed parts. Season with a pinch of salt and a drizzle of extra virgin olive oil.
For this step, take 2 slices of panbauletto and coarsely chop them using a food processor. This will serve as the surface for gratin.
To complete, sprinkle the entire surface of the baking dish with the chopped bread and drizzle with a little extra virgin olive oil. To cook, place the baking dish inside an air fryer and cook for 30 minutes at about 266°F.
Finally, remove the baking dish from the air fryer and let it rest for at least 30 minutes before serving. Your potato and zucchini cake is ready to be enjoyed!
