Rustic puff pastry bows.

Simple, tasty, and delightful.

The rustic puff pastry bows are little appetizers that look beautiful, are easy to prepare, and are flavorful to eat. Perfect for aperitifs, as a starter, or on party buffets — make plenty, I promise they will be snapped up.

For the creation of these bows I took inspiration from an American video; I’m sorry I don’t remember the name.

Ingredients

  • 2 packages rectangular puff pastry sheets
  • 1 cup ricotta (or spreadable cheese like Philadelphia (about 250 g / 8.8 oz))
  • 5.3 oz salami
  • to taste black pepper
  • to taste corn oil

Tools

  • 1 Mezzaluna knife
  • 1 Spatula
  • 1 Knife
  • 1 Oven

Steps

  • Preparing the rustic puff pastry bows is very simple — following the video above it will be child’s play; I’ll explain how to do it with step photos.

    Chop the salami with a knife or a mezzaluna.

    Roll out one sheet of puff pastry on a work surface.

    Cover it with ricotta (or spreadable cheese).

  • Spread the ricotta evenly with a spatula.

  • Cover the ricotta with the chopped salami and a grind of black pepper.

  • Close by covering with the other sheet of puff pastry.

  • Now take the oven rack and press it onto the pastry to create lines — you do not need to cut the pastry, just create surface ridges.

  • Rotate the rack and press in the opposite direction to create a checkerboard pattern.

  • With a sharp knife cut 6 vertical lines across the whole pastry (you must cut through the top sheet too, separating the strips).

  • Now cut horizontally, obtaining small squares.

  • You should obtain many separated little squares.

  • Now, using the handles of two forks or tablespoons, pinch the center of each square, pulling it toward the center and pressing slightly to obtain little bows as in the photo (the video above makes it clearer — it’s easier to do than to explain).

  • Preheat the oven to 356°F (convection).

    Transfer the bows to a baking tray lined with parchment paper.

  • Brush them with corn oil.

  • Bake in the lower-middle part of the oven (the rack just above the base) preheated to 356°F (convection) until golden, about 20 minutes, but times depend on your oven.

  • The rustic puff pastry bows are ready to be enjoyed. Bon appétit!
