Air Fryer Rice Cookies Ingredients

  • 3 5/8 cups rice flour
  • 2/3 cup butter (at room temperature)
  • 4 egg yolks
  • 3/4 cup powdered sugar (gluten-free)
  • 1 pinch fine salt
  • 2.65 oz 60% dark chocolate (for decoration)

Air Fryer Rice Cookies Steps

  • To make the rice pastry, start by sifting the flour into the stand mixer’s bowl, adding the pinch of salt and the powdered sugar, and mix.

    Separate the yolks from the whites (you can use them to make delicious homemade meringues).

    Start the stand mixer at speed 2 and add the yolks a little at a time, letting them incorporate well with the flour for about 1 minute.

  • Now that the yolks have been incorporated, add the softened butter gradually, starting the stand mixer again at speed 2 for another minute; you should get a crumbly dough.

    Bring the dough to a work surface, work quickly to form a ball, cover it with plastic wrap, and let it rest in the fridge for at least an hour.

  • Now take the pastry back and use a rolling pin to roll out the dough to a thickness of about 2 inches, and with a cookie cutter of your preferred shape, cut out the cookies.

    Place the cookies in the air fryer basket, trying not to overlap them.

    Start at 356°F for about 5 minutes, no need to turn them.

  • To make your cookies even tastier, melt the dark chocolate in a bain-marie, keeping it mixed with a spatula.

    Once the chocolate is ready, dip half the cookie and let it set on a rack for about 1 hour.
