I don’t cook fish often, but when I can I go to eat it right by the sea because Bologna is close to the Romagna coast and I enjoy going. I prepared this breaded grill with very plump red mullets, very fresh gilthead bream and large prawns.
To bread the small pieces without making a mess: put the coating in a food bag, add the fish, shake carefully and in 30 seconds you’re done.
The coating can be varied depending on personal tastes and what you have at home and I give you some ideas such as finely chopped sandwich bread, dried flatbreads (freselle), taralli with oil and chili, crackers. I recommend adding some lemon zest and aromatic herbs to taste. Salmon, swordfish, sardines, sea bass, squid and cuttlefish all work very well and success is guaranteed.

- 8 red mullets (cleaned)
- 1 clove garlic
- 1 bunch parsley
- 1 lemon (zest)
- 1 cup breadcrumbs
- to taste extra virgin olive oil

Steps
Wash the fish under running water and remove the shell of the prawns, leaving the head, removing the black vein and rinsing them thoroughly.
Chop the parsley with the garlic clove, add the grated lemon zest, add salt and pepper and place a pinch of this aromatic mixture inside the gilthead bream and red mullets.
Mix the remaining aromatic mixture thoroughly with the breadcrumbs.Brush the fish and crustaceans with oil and coat them in the breadcrumbs, pressing slightly so the breading adheres better.
Place the gilthead bream on the hot grill and after about ten minutes add the red mullets and the prawns.Turn the breaded fish on the grill for even cooking and be careful not to overcook them…
