I found the easy recipe for caviadini cookies with pearl sugar on Sale&Pepe, the very famous magazine that for years has covered cooking, gastronomy and pastry — featuring Italian preparations but also looking to the world, which I try to do as well, in my small way.
The cookies called caviadini are typical of Valsassina, in the province of Lecco, and are said to have originated in the distant 17th century, when a local nobleman asked his cook to astonish guests with a new sweet. After a few attempts and tastings done “on guinea pigs,” these crunchy, fragrant little treats were born — simply good, perfect for breakfast or an at-home snack.

- 2 cups all-purpose flour
- 1/2 cup granulated sugar
- 7 tbsp butter
- 1 egg
- 1 tsp baking powder
- as needed milk
- as needed pearl sugar

Steps
Combine the sifted flour with the sugar and one teaspoon of baking powder.
Then add the butter, the egg and a pinch of salt, and knead until you obtain a smooth, homogeneous dough.Wrap the dough in plastic wrap and let it rest in the refrigerator for about 30 minutes.
Roll out the dough to form a sheet about 1/8–3/16 inch thick.Cut rectangles of about 2 3/4 x 1 5/8 in with a wheel.
Re-knead the scraps as well and shape more cookies until the dough is used up (Sale&Pepe says you get about 25 cookies total, but only if you’re perfectionists with ruler and square 😊).Score each cookie lengthwise with the fluted wheel, making a cut along the length.
