Quick Coffee Semifreddo with Cookies – Easy No-Bake Recipe

A sweet recipe today, a spoon dessert, very quick, fragrant and always creamy: the quick coffee semifreddo with cookies — very fast and no baking required!

A dessert to keep in the freezer for unexpected guests and to give ourselves a sweet little treat as we move toward the hot, sultry days of summer. I really love the flavor of coffee and this super easy little recipe was one of my favorites!

On purpose I didn’t soak the Pavesini cookies because I wanted them crunchy, but if you prefer you can soak them in a little brewed coffee diluted with water. Now, let’s go to the kitchen!!!

I wrote NO-BAKE even though the cream must be just gently warmed!

QUICK COFFEE SEMIFREDDO

Ingredients — QUICK COFFEE SEMIFREDDO

  • 1 2/3 cups heavy whipping cream (fresh)
  • 1 tube of sweetened condensed milk
  • 2 classic Pavesini cookies
  • 2 coffee-flavored Pavesini cookies
  • 4 teaspoons instant coffee
  • 1 tablespoon granulated sugar

Let’s prepare the QUICK COFFEE SEMIFREDDO together

  • Line the loaf pan with plastic wrap, covering the bottom and sides very well. Place the classic Pavesini cookies along the sides and the coffee Pavesini on the bottom.

    Remember you can use either Pavesini or ladyfingers!

  • In a small amount of cream, gently warmed, dissolve the instant coffee and the granulated sugar and let it cool.

    In a chilled bowl from the refrigerator — and with the electric beaters (preferably cold as well) — begin to whip the fresh liquid cream to complete this no-bake summer dessert.

  • When the mixture is soft and semi-whipped, add the sweetened condensed milk blended with the instant coffee, then whip a little more to combine everything well for a few minutes.

  • Pour the quick, chilled coffee dessert mixture into the pan and finish the quick coffee semifreddo with the coffee Pavesini cookies on top.

  • Place in the freezer until ready to serve, but for at least 4–5 hours. Creamy and truly delicious — here is the quick coffee semifreddo!
