With the spicy lupin sauce I thought of making a kind of hummus believing the mixture would turn out creamy, but making it with only the lupins and without adding chickpeas or half a boiled potato, it remained rather grainy, alas!
The flavor is pleasant — I added chili, turmeric and paprika plus a pinch of salt and pepper — and it completed a small savory appetizer buffet I prepared a few days ago.
I should point out that I didn’t put the remaining whole lupins in the photo, because I am so greedy that when I see them, none are left!
THE LUPINS I used are in brine and for me they are an appetizer, a snack for an afternoon, not exactly a staple food — at least until today — because after doing a bit of web research I discovered that nutritionally the lupin is rich in nutrients such as proteins, vitamins, iron and much more, and being gluten-free they are suitable even for people with gluten sensitivities or celiac disease.
I also discovered that LUPINS can be potentially allergenic foods and should be consumed with particular caution by people with food sensitivities.
WITH LUPINS you can also make vegan meatballs and soups, and they are often combined with chickpeas or potatoes especially for patties or meatball recipes because those additions give a soft and excellent creaminess.
LUPINS are legumes, they are a low-calorie food (only 119 kcal per 100 grams of product) and recent studies have shown that the soluble fiber they are rich in helps reduce glycemic spikes and slow carbohydrate absorption.
The good content of calcium and phosphorus makes LUPINS important for strengthening the bones of growing children and adolescents, and they are also useful for women in menopause to help prevent osteoporosis.
There are different varieties of LUPINS:
1) GROSSETO SWEET LUPIN;
2) POLLINO LUPIN;
3) VAIRANO GIANT LUPIN;
4) ANTERIVO HAIRY LUPIN;
5) TARWI LUPIN.
CONTRAINDICATIONS FOR LUPIN CONSUMPTION
If we eat too many of them… they can have an unpleasant laxative effect!

- 4.6 oz lupins (shelled, in brine, rinsed)
- 2 tbsp lemon (juice)
- to taste turmeric powder
- to taste paprika
- 1 pinch chili pepper
- to taste extra virgin olive oil

Steps
1) Maximum speed for this hummus and so….
2) I open the package of lupins in brine, rinse them under running water and then put them in the bowl of the electric mixer.
3) I add the lemon juice, the preferred spices, a drizzle of EVO oil and turn on the mixer.
4) I taste and try to balance the flavor by adjusting salt and pepper. If you want a lower-calorie sauce, add a little water in addition to the vegetable fat.
5) Blend everything until you have a grainy, tasty little sauce which, placed in a bowl and well covered with cling film, will be stored in the refrigerator until serving time.
