The turkey cutlets pizzaiola are a light main course but full of flavor.

I love to prepare them this way as an alternative to red meat, which I always try to eat sparingly.

White meat, tender and juicy, gently cooks in a sauce made with oxheart tomatoes, meaty and sweet, enriched by the scent of oregano and the bold taste of the olives.

Ingredients

  • 14 oz turkey (slices)
  • 4 oxheart tomatoes (or Piccadilly type)
  • to taste salt
  • 3 tbsp extra virgin olive oil
  • to taste oregano
  • to taste rosemary
  • 2 cloves garlic
  • 10 Taggiasca olives (or green olives)
  • to taste sage

Steps

  • Wash the oxheart tomatoes, remove the seeds and cut them into cubes.

    In a wide pan add the tomatoes, the garlic cloves (halved or whole), the olives, basil and oregano.

    Cook for a few minutes, until they start to release their juice and only now add the extra virgin olive oil.

    If you prefer, you can add the oil at the beginning and brown with the tomatoes and garlic.

    Salt lightly.

    Arrange the turkey cutlets in the pan, cover them with the sauce and cook over medium-low heat for about 15 minutes, turning once.

    Continue cooking until the meat is done.

    It will take about 25–30 minutes, which may vary depending on the thickness of the meat.

    At the end of cooking remove the garlic if you prefer and, if desired, add a grind of pepper.

Let the dish cool completely.
Place it in an airtight container (better if with its sauce).
Store in the refrigerator at +39 °F for 1–2 days.
The tomato sauce helps keep the meat moist.

In a pan: over low heat, adding a tablespoon of water if the sauce has reduced.
In the microwave: covered, at medium power, stirring the sauce halfway through.
Avoid reheating too long to prevent them from becoming dry.
