Steps

To make the beef meatballs in stew

  • To start, place the ground beef in a large mixing bowl, then add half a chopped onion and a tablespoon of currants and pine nuts.

  • Proceed and add a teaspoon of salt, the egg white, breadcrumbs, and if you like, one or two tablespoons of grated cheese.

  • At this point, mix everything by hand and form the meatballs into spherical shapes. Heat the pan, greased with extra virgin olive oil, and sear the meatballs until a slight crust forms.

  • Continue by heating some extra virgin olive oil in a large casserole, sautéing half a chopped white onion with a chopped carrot. After a few minutes, add the previously seared meatballs and cover completely with water.

  • To complete the ingredients, add a teaspoon of salt, the peas, and mushrooms. Mix everything well and let it cook over medium heat for about 30 minutes with the lid on.

  • To finish, turn off the heat and serve your stewed meatballs on a deep dish, garnishing with pepper and thyme if desired.

Tip!

Leftover meatballs can be stored in the fridge for about 2 days. They can be eaten cold or after a light reheat when needed.
