- 1 white onion
- to taste extra virgin olive oil
- 3.5 oz smoked salmon
- 7 oz robiola
- 1.1 lbs potato gnocchi
- to taste salt
- to taste chopped parsley
- to taste tabasco sauce (optional)

Steps
To prepare Gnocchi with Salmon and Robiola
First, take an onion, peel it, and chop it into cubes. Then heat a generous amount of extra virgin olive oil in a large pan and sauté the onion for a few minutes over medium heat.
Next, add all the salmon to the pan and let it infuse for a few minutes, stirring everything with a spoon or spatula.
At this point, add all the robiola in the pan along with a small cup of water to facilitate its melting. Stir everything so that the cheese melts and blends well with the rest of the ingredients.
Meanwhile, bring a pot of water to a boil and add salt. Once boiling, pour in the gnocchi and wait a few minutes until the gnocchi float to the surface. Then turn off the heat and drain the gnocchi in a colander.
To finish, pour the drained gnocchi directly into the pan. Gently mix with a spatula until all the seasoning has perfectly blended with the gnocchi.
Finally, serve the portions on a plate and garnish with chopped parsley and, if desired, drops of tabasco sauce!
Tip
Melt the robiola in the pan over not too high a flame, and once done, turn off the stove while waiting for the gnocchi to cook.
If the water used to melt the robiola is insufficient, add a bit more until you obtain a thick cream.
