Let me tell you a short story about how I became passionate about sweet potatoes. It happened during a trip to Amsterdam when I stumbled upon one of the many takeaway fries shops. One in particular offered classic french fries and sweet potatoes, both fried. Since I was used to eating regular white potatoes, I obviously chose those, but when the vendor placed my portion inside a paper cone, he accidentally mixed in some sweet potatoes.

Once I had that cone full of potatoes in my hands, driven by curiosity, I immediately tried the sweet potatoes (which I would never have chosen). As soon as I tasted them, it was like a flash! I thought: “why am I discovering them only now?” From my statement, you can understand that I was immediately enthusiastic, and as soon as I returned to Italy, I rushed to buy them, and since then, I regularly consume them.

The main characteristic of sweet potatoes is their intense orange color, combined with a taste entirely different from white potatoes. They also have a very rich percentage of vitamin A, practically absent in regular potatoes, but maintain almost unchanged percentages of calories, proteins, fats, and carbohydrates. Sweet potatoes, compared to white ones, have more fiber, vitamin B6, vitamin C, and calcium but slightly less potassium.

In this very short recipe, I show you how to prepare them in an extremely simple way in the air fryer and enjoy them as you prefer, on their own, or to accompany meat dishes, hamburgers, chicken, etc.

  • 1.1 lbs sweet potatoes
  • as needed extra virgin olive oil

Steps

To make the Sweet Potatoes in Air Fryer

  • First, take the freshly washed and dried sweet potatoes and use a peeler to remove all the skin. Cut the potatoes first into slices about 0.4 inches thick and then cut the slices into sticks.

  • At this point, put all the sticks in a salad bowl and pour in enough extra virgin olive oil to coat them completely. Mix well using your hands or a spatula to combine everything thoroughly.

  • To finish, pour all the sticks into the air fryer basket lined with parchment paper (you can also skip the paper) and set the cooking to 356°F for about 40 minutes, making sure to stir them occasionally.

  • Finally, once cooking is complete, sprinkle the potatoes with salt and serve.

Tips

Cut the potatoes keeping a uniform thickness to ensure even cooking.

Stir the potatoes periodically during cooking and taste them occasionally to check the cooking level, as timing may vary depending on the amount and model of your air fryer.

Garnish the cooked potatoes with barbecue sauce for an extra flavorful and more delicious touch.
