Steps

To make the soup with canned beans

  • First, chop the onion and carrots into rough pieces without worrying too much about precision. Meanwhile, heat some extra virgin olive oil in a large pot and then sauté everything for a few minutes over medium heat.

  • Proceed by opening the cans of beans and draining the liquid into a colander, making sure to rinse them under running water. Add the water and beans into the pot and finally add the peeled cherry tomatoes directly from the can.

  • To complete, add the salt and let it cook with the lid on over medium heat until the carrots are soft. Add more water if necessary so that all ingredients are fully submerged.
