- 3.5 oz all-purpose flour

Steps
First of all, prepare the gnocchi. Place well-drained ricotta in a bowl. Then add the flour, the grated cheese and the salt and mix first with a spoon, then with your hands, until you obtain a smooth, homogeneous dough.
Transfer the dough to a work surface lightly dusted with semolina (durum wheat) flour and divide it in half. Form rolls about 1 1/8 in thick and cut them with a knife into even pieces. Then roll them between your palms until you obtain walnut-sized balls.
As you shape them, place them on a tray lightly dusted with semolina flour, without overlapping, and let them air-dry for 20 minutes.
Meanwhile, mix the grated cheese with the chopped parsley, nutmeg, salt and pepper in a bowl. Bring a large pot of salted water to a boil. As soon as it boils, drop the gnocchi in and cook them until they float to the surface. Remove them with a slotted spoon and arrange them in a baking dish greased with oil. Add the seasoned grated cheese mixture prepared earlier, drizzle with a little oil and cook in the air fryer at 392°F for 5 minutes.
Once they are golden on top and the cheese has melted, remove them and serve immediately.
