When well prepared they are truly photogenic; it’s important to generously and imaginatively fill each layer — everyone will enjoy it. You can choose to make it from scratch, including the base bread, or buy a ready-made one to serve, already filled and sliced. Or, as I did, buy the ready base and fill it at home; the ideal, if you can find it, is the Pan Canasta, a cross between brioche and sandwich bread made with flour, eggs and butter, with a neutral flavor. Perfect as an aperitif or appetizer — enjoy it however you like.

  • 1 jar mayonnaise
  • 4 tbsp ketchup
  • 3.5 oz shrimp
  • 3.5 oz smoked salmon
  • 1/2 cup sour cream
  • lime (zest of 1 lime)
  • to taste chives
  • 3 oz Prosciutto crudo (Parma PDO)
  • 1 robiola cheese
  • 3 radishes
  • 3 oz Mortadella (Bologna)
  • to taste salsa verde
  • 3 eggs
  • to taste pink peppercorns
  • 3.2 oz Russian salad (ready-made (about 3/8 cup))
  • 1 savory panettone (panettone gastronomico)

Steps – Easy Savory Panettone

  • Pink sauce and shrimp. Prepare the pink sauce by mixing mayonnaise and ketchup; you can also use a store-bought version. Add the shrimp to the sauce, mix and spread on the slice.

  • Sour cream and smoked salmon. Flavor the sour cream with the grated lime zest, pink pepper and chopped chives. Then garnish with the smoked salmon.

  • Prosciutto crudo and robiola. Mix the robiola in a bowl to make it creamy, and slice some radishes for garnish. Place the slices of prosciutto between the cream and the radishes.

  • Mortadella and salsa verde. To prepare the sauce you’ll need a bunch of parsley, 2 anchovy fillets in oil, a teaspoon of pistachios, a few capers, and about 3 tbsp of extra virgin olive oil. Blend everything for a few seconds and the sauce is ready. Place the mortadella on top of the sauce.

  • Eggs and Russian salad. Spread the Russian salad on the slice and top it with slices of hard-boiled egg.

  • Assemble the panettone. Cut the panettone into 5 or 6 discs, then slice them in half. Fill with the previously prepared fillings. To make tasting easier, place two slices between the fillings so each single portion becomes a true sandwich. As a curiosity, traditionally there should be 5 layers, but a few extra are welcome…
