The asparagus mini-tarts are a simple and tasty appetizer, perfect for Easter lunch or Easter Monday.
Soft, fragrant and very easy to make, they can be prepared in advance and served warm or at room temperature.
In this recipe I used fresh asparagus, which are in season in spring and make these tarts even more flavorful.
Ideal to make in single portions, they are perfect as an elegant yet uncomplicated appetizer.
I used my air fryer but they can also be easily baked in the oven.

Ingredients
- 7 oz wild asparagus (cooked with half an onion and one clove of garlic)
- 6 eggs
- 1 pinch salt
- 1 pinch pepper
- 3 tbsp grated cheese (plus another tablespoon for cooking)

Steps
Sauté the asparagus with half an onion and one clove of chopped garlic and let cool.
In a bowl, beat the eggs with a pinch of salt and pepper.
Add the grated cheese and continue mixing with a fork.
Add the previously cooked, cooled asparagus and mix.
Oil the molds and pour a little batter, filling almost to the rim.
Place the molds in the air fryer basket, sprinkle a little grated cheese and cook for about 15 minutes at 374°F.
