The frittata with wild asparagus is a simple yet flavorful dish, perfect in spring.
In this version I cooked it in the air fryer, obtaining a frittata that’s soft inside and lightly golden outside. Once ready I cut it into cubes, ideal to serve as a starter, aperitif or to enrich a buffet.
You can also bake it in the oven or cook it in a pan and serve it in wedges; it will be very tasty either way. The asparagus frittata is great hot or cold.

Ingredients

  • 6 eggs
  • 11 oz wild asparagus (sautéed with garlic and onion)
  • 2 small cream cheese portions (formaggini)
  • 2 tbsp grated cheese
  • to taste salt

Tools

  • Fork

  • Absorbent paper sheets
  • Air fryer

Steps

  • Remove the tough end of the asparagus, cut them into pieces and sauté for about 15 minutes with chopped garlic and onion.

  • In a separate bowl, mash the small cream cheese portions (formaggini) with a fork.

  • Add the eggs and beat well with a fork.

  • Add the grated cheese and the cold asparagus and mix.

  • Line the air fryer basket with parchment paper and pour the egg mixture into it.

  • Sprinkle more grated cheese on top and cook for about 15 minutes at 374°F

  • Serve cut into cubes. Delicious hot or cold.

The frittata with wild asparagus can be stored in the refrigerator for 1-2 days in an airtight container. Before serving you can heat it for a few minutes in the air fryer or enjoy it cold.

You can enrich the frittata by adding:
small cubes of scamorza or provola
crispy pancetta
ricotta for a creamier version.
