Ingredients
- 2 1/2 cups rice flour
- 2 eggs
- 3/4 cup granulated sugar
- 1/3 cup lactose-free milk
- 1/3 cup sunflower oil
- 1 sachet vanillin
- 1 sachet baking powder
- 1 pinch salt
- 1 1/3 cups blueberries
- to taste granulated sugar

Steps
Pour the eggs and sugar into the bowl, and whisk for a few minutes using the hand whisk.
Add the oil and the milk and mix again.
Add the rice flour together with the baking powder and the vanilla, and mix until the batter is homogeneous and free of lumps.
Put the whisk aside and use a silicone spatula. Add the blueberries and fold gently.
Transfer the batter into a loaf pan lined with parchment paper. Place a few blueberries on the surface and sprinkle with granulated sugar, then bake in the air fryer in oven mode for 25 minutes at 284°F, then another 10 minutes at 329°F, always in oven mode.
