Today I made Easter muffins; I was tired of the usual colomba, but at the same time I wanted a cake that reminded me of it. These Easter muffins really have the flavor of colomba but are much more decadent. I made them with the Bimby, but you can use a stand mixer or even make them by hand. The secret ingredient is the yogurt, which makes them soft and super delicious.

Ingredients
- zest of 1 lemon
- zest of 1 orange
- 3 eggs
- 3/4 cup granulated sugar
- 1 2/3 cups all-purpose flour
- 1/3 cup vegetable oil
- 2/3 cup Greek yogurt
- to taste vanilla extract
- 1 tablespoon Colomba flavoring
- 1/4 cup candied fruit
- 1 pinch salt
- as needed coarse sugar for sprinkling
- as needed peeled (blanched) almonds

Steps
In the Bimby bowl, pulverize for 10 seconds at speed 10 the orange zest with the lemon zest and the sugar.
Add the rest of the ingredients (except the candied fruit) and work for 30 seconds at speed 5.
Add the candied fruit and mix.
Transfer the batter into the liners (they should be filled two-thirds full).
Add the coarse sugar and a few almonds on top and bake for about 25–30 minutes at 356°F.
Variations:
If you don’t like candied fruit you can use chocolate chips.
You can also make a bundt or cake version.
You can substitute the yogurt with ricotta.
