Oven-Baked Pork Chops (Rib Chops)

in

Oven-baked pork chops are a simple and truly tasty main course, perfect when you want something delicious without frying. In this oven version, the rib chops stay tender inside and nicely golden outside, thanks to a rich and flavorful breading that wins you over at first bite.
I often make them when I want to bring a dish to the table that everyone — adults and children — will enjoy. The secret is the double texture: crispy outside and juicy inside. If you have rather thick chops, I recommend flattening them slightly so they cook evenly and remain even more tender.
The breading is simple but aromatic, enriched with grated cheese, garlic and parsley — ingredients that add character without masking the meat’s flavor. Baking in the oven makes them lighter yet still irresistible, with that golden crust that immediately invites you to taste.
Serve them hot, perhaps accompanied by roasted potatoes or a fresh salad.

Ingredients for Oven-Baked Pork Chops

  • 4 pork chops (rib chops)
  • 2 cups breadcrumbs (about)
  • 3/4 cup flour (about, I use re-milled durum semolina flour)
  • 1/3 cup grated Grana Padano
  • 2 eggs
  • 3 tbsp extra virgin olive oil
  • 1 bunch chopped parsley
  • 1 pinch garlic powder
  • to taste salt
  • to taste pepper

Preparation OVEN-BAKED PORK CHOPS

If you have very thick chops available, I recommend flattening them slightly with a meat mallet.

  • Place the flour on a plate.

In another plate, or in a wide bowl, mix the breadcrumbs, the grated cheese, the garlic powder and the chopped parsley.

In a bowl, beat the eggs together with the extra virgin olive oil, a pinch of salt and a few grinds of pepper.

Coat the chops first in the flour, then in the egg mixture and finally in the breadcrumbs, pressing with your hands to make the breading adhere well.

Arrange the breaded chops on the oven tray lined with parchment paper.

Bake in a preheated oven at 356°F (convection) for 25-30 minutes, turning them halfway through cooking (they should take on a nice golden color).

Remove the oven-baked pork chops, salt them and serve hot.
