Baked Scallops are a tasty and very elegant appetizer, an absolute must in a seafood menu, very easy and quick to make. Ideal to prepare for the Christmas holidays (see also the holiday menus), Christmas Eve dinner, Christmas lunch, and New Year’s Eve dinner. I used flavored breadcrumbs that I always make at home — try making them yourself and you’ll be satisfied. If you don’t have stale bread at home, you can use the breadcrumbs you have and add herbs. - 8 Scallops
- to taste Extra virgin olive oil
- to taste Salt
- to taste Pepper
- to taste Seasoned breadcrumbs (or plain breadcrumbs)
- to taste Parsley
- to taste Butter (optional)
How to make Baked Scallops
Let’s start preparing the Baked Scallops. Clean the parsley and chop it finely. Open the scallops and clean them, keeping only the central muscle and the orange roe (coral) and removing everything else.
Place the extracted scallop muscle on a plate and wash it thoroughly. Also keep the concave part of the shell, which we will use to cook and serve the mollusk.
After use, I recommend washing the shell well with dish soap and, if you like, washing it in the dishwasher; you can then reuse it to serve other seafood appetizers such as shrimp or to use later if you buy frozen scallops without shells.
Now arrange the shells on a baking tray, side by side. Put in each shell 2 tbsp of extra virgin olive oil, place the scallop in the center, add a pinch of salt, a sprinkle of pepper, if you like a small knob of butter, a handful of seasoned breadcrumbs (about 1/3 cup) and a sprinkle of the previously chopped parsley.
Bake in a preheated oven at 356°F for about 20 minutes; you should see the scallop nicely gratinated. When they are cooked, take them out of the oven and serve the Baked Scallops hot, but wait a couple of minutes as they may be scalding.
How to store cooked Baked Scallops
