The oat flakes and mixed nuts cookies are delicious treats naturally gluten-free and lactose-free. They take 5 minutes to prepare and are very tasty. The ingredients are few and usually already in the pantry: eggs, honey, extra virgin olive oil, almonds, walnuts and dark chocolate. I chose walnuts and almonds, but you can also replace them with hazelnuts, pistachios, pecans—basically whatever you like and have available. The rolled oats I used are the large ones that I pulsed in the blender to reduce them into smaller pieces but not into flour. If you want a crunchier texture, just leave them whole. For those who cannot consume eggs, you can try the muesli cookies which are also without added sugars, only a little malt. Try also the oat and peanut butter cookies.

Steps
Put the rolled oats in the blender, pulse them coarsely and set aside.
Similarly, pulse the mixed nuts until chopped.
In a bowl break the egg, add the honey and oil and mix with a fork.
Add the oats, the chopped nuts and the dark chocolate chips.
Mix everything together. Using a spoon, shape cookies on a baking sheet lined with parchment paper.
Bake at 356°F for 10 minutes in a preheated conventional oven.
Remove from the oven and let cool completely.
