Gluten-Free Vegetarian Burgers

I know many will say don’t call them burgers…. and I still call them that…

When homemade, vegetarian burgers are delicious and much healthier.
Here is an easy, finger-licking recipe. They make a great starter or main course, healthy but tasty, to serve with a nice salad. Perfect also for the classic sandwich instead of meat…and I assure you it’s delicious…

Ingredients for gluten-free vegetarian burgers

  • 6 zucchini
  • as needed chickpea flour
  • 1 pinch ground turmeric
  • as needed gluten-free breadcrumbs
  • to taste salt
  • as needed extra virgin olive oil
  • Half onion

Preparation of gluten-free vegetarian burgers

  • Let’s see how to prepare the vegetarian burgers.

    First of all clean and wash the zucchini well. Slice into rounds, take a small pot, fill with water, add the zucchini, and when it starts to boil cook for 6-7 minutes. Drain well and blend with an immersion blender. In a pan, sauté some chopped onion in a little oil. Season the zucchini with salt, add the sautéed onion, then gradually add the chickpea flour a little at a time, stirring constantly, until you obtain a fairly firm consistency; do the test to see if you can form the patty. At this point add a pinch of turmeric and one tablespoon of breadcrumbs, mixing well.

  • Now shape your vegetarian burgers. Take a bit of the mixture, form a ball pressing firmly, then flatten to give the burger shape, molding with your hands. Put some breadcrumbs on a plate and coat the burgers on each side in the breadcrumbs. In the same pan where you sautéed the onion, heat a drizzle of oil; when it’s hot, cook the burgers on both sides until the desired golden color is reached. When ready, place on paper towels.

Notes

The vegetarian burgers are great served with a nice salad or with a sauce, but you can also prepare the classic sandwich, putting whatever you like most inside.
