PISTACHIO COOKIES WITH WHITE CHOCOLATE

The pistachio cookies are crumbly, fragrant little treats that melt in your mouth and are decorated with white chocolate. The great thing is they are simple but look like they came from a pastry shop. One of those treats you tell yourself “I’ll just have one” and then suddenly the baking sheet is empty. They are ideal for breakfast, for an afternoon snack or to serve with coffee, and can also make a wonderful homemade gift. They keep in a tin box and will remain crisp for several days. Perfect also to give as a present, perhaps wrapped in clear paper with an elegant ribbon. Below, let’s see what you need to prepare our delicious pistachio cookies with white chocolate:

Ingredients

  • 1 egg eggs
  • 7 tbsp butter
  • 1/3 cup sugar
  • 1 1/4 cups all-purpose flour
  • 1/2 cup pistachio flour
  • vanilla extract
  • 3/4 cup chopped pistachios (+ as needed for decorating)
  • a pinch of salt
  • 4 oz white chocolate

Preparation

  • Combine the softened butter with the sugar in a bowl and work the mixture until creamy and well blended. Add the egg, the vanilla extract, the salt and mix carefully until fully incorporated.

  • Fold in the all-purpose flour and the pistachio flour, continuing to knead until you obtain a homogeneous dough. Also fold in the chopped pistachios and mix everything well.

  • Shape the dough into a compact disk, wrap it in plastic wrap and let it rest in the refrigerator for at least one hour.

  • Roll the dough out on a lightly floured surface to a thickness of about 3/16 inch. Cut out cookies with your preferred cookie cutter, about 1.5–2 inches in diameter.

  • Place the cookies on a baking sheet lined with parchment paper, spaced well apart. Bake in a preheated static oven at 347°F for 12-15 minutes, until the edges are lightly golden.

  • Remove from the oven and let cool completely. Meanwhile, melt the white chocolate in a double boiler or in the microwave.

  • Once cooled, dip half of each cookie into the melted chocolate.
    Immediately sprinkle with chopped pistachios and allow to set on parchment paper.
