Battered Cod — crispy and very tasty. The recipe I’m sharing today is for wonderful cod fillets coated in a light, crispy batter — dry and not greasy. In my batter I add a glass of cold beer which makes it truly special: crunchy yet light and flaky. For the fish I used frozen cod fillets, but you can use fresh cod fillets or fillets of other fish such as hake, gilthead bream, perch, either fresh or frozen. Serve with a fresh salad or go all out with french fries — you can imagine how delicious it will be! Let’s run to the kitchen and prepare my Battered Cod Fillets together.

INGREDIENTS FOR FRIED COD IN BATTER

  • 1 lb 2 oz cod fillets
  • 1/2 cup beer (cold)
  • 1 cup all-purpose flour
  • 1 egg
  • 1 tsp instant baking powder (for savory preparations)
  • to taste salt
  • 1 2/3 cups vegetable oil (for frying)

HOW TO PREPARE FRIED COD IN BATTER

  • If you’re using frozen fish fillets, let them thaw thoroughly and pat them dry with kitchen paper. Cut them into pieces roughly the size you prefer. In a bowl, beat the egg with a pinch of salt.

  • Add the cold beer, the flour and one teaspoon of baking powder. Mix well with a whisk or simply a fork. You will obtain a thick batter.

  • Heat a generous amount of vegetable oil in a pan. Dip the pieces of cod first into the batter, making sure it adheres evenly on all sides, then into the hot vegetable oil. Brown the cod well on both sides and then drain on kitchen paper.

Loredana’s Tips

If you have leftover fried cod, you can store it in a container in the fridge for one day. Just reheat it for a few minutes in a hot oven to bring back its crispiness and fragrance as if freshly made.

If you prefer, you can replace the beer with the same amount of cold sparkling water
