Ingredients

  • 3 1/3 cups 00 flour (all-purpose)
  • 11 1/3 tbsp Butter
  • 3/4 cup Sugar
  • 1 Zest of 1 unwaxed lemon
  • 2 Eggs

Preparation

  • In a bowl, quickly work the flour with cold butter cut into pieces, the sugar, grated lemon zest and salt.
    Crumble the dough with your hands, then form a well and add the eggs to the center.
    Knead until you have a homogeneous mixture, form a ball and wrap it in plastic wrap.
    Let it rest in the refrigerator for at least 30 minutes.

  • Melt the milk chocolate in a double boiler or in the microwave.
    Once melted, remove from the heat and add the heavy cream, stirring until you obtain a smooth, homogeneous cream.

  • Roll out the pastry and line a greased and floured tart pan.
    Pour the chocolate cream onto the base and level it well.
    With the remaining pastry, create decorations as you like (such as the classic lattice).
    Bake in a preheated conventional oven at 356°F for 30-35 minutes, until the surface is golden.
    Let cool completely before removing from the pan.

    I placed strips of parchment paper in a cross at the base to help remove the tart without breaking it.
