Recipe for Spiced Curry Chicken in Slow Cooker

  • Start preparing the spiced curry chicken by trimming excess fat and cartilage from the chicken and cutting it into pieces.

  • Season with salt, black pepper, lemon juice, ground ginger, curry powder and, if you like, some fresh herbs — I used parsley, for example.

  • Turn the slow cooker on to the HIGH setting.
Pour in the extra virgin olive oil and a grated clove of garlic.
Add the seasoned chicken and spread it evenly.
Do not add any additional liquids: the chicken will naturally release its juices during cooking, staying tender and well-seasoned.

  • Close the slow cooker with its lid and cook the chicken for 2 and a half hours.
Do not open the pot during this time.
Once ready, bring the spiced curry chicken straight to the table.
