Soft and Quick Skillet Rolls – No Rising

Ingredients

  • 1 2/3 cups Type 0 (all-purpose) flour
  • 7 tbsp water
  • 7 tbsp milk (plant-based also fine)
  • 2 tbsp sunflower oil (olive oil also OK)
  • 1 tsp fine salt
  • 2 tsp instant baking powder for savory preparations
  • 1/2 tsp baking soda

Steps

  • Put all the ingredients in a bowl: flour, water, milk, oil, salt, baking powder and baking soda. Mix the mixture with a fork until you get a soft, workable dough. Then let it rest for 10 minutes (the short rest is my secret).

  • If you use a pan like mine, the one in the photo (click this link to see it) brush it with a little olive oil, then place 1 heaping tablespoon of dough in each compartment.

    If instead you use a nonstick skillet, brush it with a little olive oil, then pour 1 heaping tablespoon of dough for each roll, spacing them apart.

  • Cook the rolls until they are golden and well risen (about 2-3 minutes), then flip them to the other side and finish cooking.

    Let them cool slightly before serving or filling them according to your tastes.

They keep for a few days and can also be frozen.
