Oven and Air Fryer Frittata with Zucchini and Ricotta

There are recipes that taste like home, simple things made with love.
This oven-baked frittata with zucchini and ricotta was born one summer evening, with what I had in the fridge and little time to cook.
Soft, light, and fragrant, it is prepared in 10 minutes and is also perfect cold the next day.
It’s one of those dishes I make when I need something good that nourishes without being heavy.
And in summer… it’s a real joker!

Ingredients






(for 4 servings)


3 eggs
2 medium zucchinis
5.3 oz of ricotta
2 tablespoons of parmesan
Salt and pepper to taste
Extra virgin olive oil
A few mint leaves (optional)


Steps



Procedure




Grate the zucchinis and sauté them for 5 minutes in a pan with a drizzle of oil. You can also slice them.
In a bowl, beat the eggs with ricotta, parmesan, salt, and pepper.
Add the lukewarm zucchinis and mix well.
Pour into a baking dish lined with parchment paper and bake at 356°F for 20-25 minutes.
Serve hot or cold, even in cubes for an appetizer.


Cooking in the AIR FRYER



Pour the mixture into a lightly oiled non-stick dish suitable for the air fryer.
Cook at 338°F for 15-18 minutes, checking browning with a toothpick (the center should be dry but soft).










📌 Tips




If the surface darkens too much, cover it with aluminum foil halfway through cooking (only if your air fryer allows it).
Great even cold, cut into cubes for an appetizer or to take to work.


Tips and Notes



Storage




The frittata keeps in the refrigerator for 2 days in an airtight container.
It’s excellent even cold, or slightly reheated for a few minutes in the air fryer at 320°F.
Freezing is not recommended, as ricotta tends to release water after thawing.











Useful Notes


You can replace ricotta with stracchino or light cream cheese for a creamier version.
If you prefer a firmer frittata, you can add 1 tablespoon of breadcrumbs to the mixture.
Adding fresh mint or a pinch of nutmeg will make the flavor even more fragrant and fresh.
If you have a silicone air fryer mold, no need to grease: it comes out perfectly!
