Chicken and Rice – Special Swiss White Tradition Recipe

Chicken and rice has a delicate, light taste and therefore cooks quickly using a pressure cooker.
This special rice was the classic Sunday lunch when I was young and staying with dear friends in French-speaking Switzerland.
While in Italy Sunday is a ritual to eat pasta with sauce — which is tasty but heavy (after lunch a nap becomes a necessity) — I must say I did not miss it; changing habits sometimes does no harm. The rice, which is easier to digest than pasta, made me feel agile enough to enjoy beautiful Sunday afternoon excursions, like walks by the lake, in forests, and other lovely places.

  • 2 tablespoons Oil
  • to taste Butter
  • Onion (One)
  • 2/3 cup White wine
  • 9 oz Chicken breast (Sliced)
  • 1 1/2 cups Rice (For risottos (Arborio rice))
  • as needed Vegetable broth (Prepared with vegetables or with bouillon)

Preparation

  • First, prepare a good vegetable broth by simmering water with vegetables (celery, carrot, onion and potato) in a small pot for thirty minutes.

  • Then put three tablespoons of oil in the pressure cooker with a knob of butter and the finely chopped onion.

  • Brown slightly and then add the chicken cut into small cubes.

  • Leave for a few minutes and add the rice and white wine. Let it evaporate while stirring and finally pour in the half liter of vegetable broth already prepared.

  • Close the pressure cooker and then count eight minutes of cooking from when it reaches maximum steam and you lower the flame (follow the cooking instructions for the pressure cooker you are using).
