Ingredients
- 2 fennel bulbs (washed and trimmed of tough parts)
- 2 eggs
- 2 cups stale bread (toasted, crackers, or ready-made breadcrumbs)
- to taste parsley
- 1 clove garlic
- to taste salt
- 1 2/3 cups 00 flour (all-purpose flour)

Steps
Preparing the Fennel
Clean the fennel by removing the tougher outer leaves, wash and slice into pieces about a half centimeter thick (about 1/4 inch).
Blanch the fennel slices in salted boiling water for about 5 minutes, until tender but still firm. Drain and let cool slightly.
Prepare four shallow dishes: one with milk (or a plant-based drink), one with the flour, one with the eggs beaten with salt and pepper, and one with the breadcrumbs ( for a more aromatic option see this HERB BREADCRUMB recipe ) mixed with grated Parmesan and spices.
Dip each fennel slice first in the milk, then in the flour, then in the beaten egg and finally in the breadcrumbs, pressing well so the coating adheres.
Preheat the air fryer to 356°F (180°C) for 5 minutes.
Arrange the breaded slices in the air fryer basket without overlapping them.
Lightly spray with extra virgin olive oil to achieve perfect crispness.
Cook at 356°F (180°C) for 12-15 minutes, turning halfway through.
Remove and serve hot!
