Ingredients

  • 1 cup cake or pastry flour (low-protein flour for pastries that you usually use (about 125 g))
  • 5/8 cup granulated sugar (about 125 g)
  • 7 tbsp unsalted butter (about 100 g)
  • 1/3 cup heavy cream (can be lactose-free (about 80 ml))
  • 1 pinch salt
  • 2 tbsp unsweetened cocoa powder
  • 1/3 cup chocolate chips (about 70 g)
  • 1 1/2 tsp vanilla extract (about 7 ml)

Steps

  • Spread the flour on a baking sheet and bake it at 347°F (175°C) for 8 minutes, then let it cool.

  • Beat the butter with the sugar using an electric whisk, add the flour a little at a time, a pinch of salt, the cocoa and the vanilla, keep mixing and add the cream or milk.

  • Stir in the chocolate chips and, if you prefer a softer cream, add more cream. Spoon into cups and store in the fridge.
