I’ll be honest: I had fresh zucchini to use and no desire for the usual recipes 😅 so I made these crispy zucchini sandwiches stuffed, and they were gone before they reached the table.
These crispy zucchini sandwiches stuffed with speck and provola are brilliant when you want something tasty but quick: they look like little sandwiches, but they’re actually vegetables filled with a super-crispy exterior and melty inside. They are among the easy zucchini recipes and popular quick dinner ideas, perfect also as an appetizer or snack.
The nice thing is they’re versatile: you can think of them as true fake zucchini buns, ideal as a light alternative to classic sandwiches. They’re perfect if you’re looking for tasty zucchini recipes, or a quick dish to prepare when you’re short on time but still want something delicious.

Ingredients
- 12 slices zucchini (large)
- 3 oz provola
- 2 oz grated Parmesan
- 2 tablespoons breadcrumbs
- 3 oz mozzarella
- 3.5 oz speck
- 3.5 oz avocado
Steps
Slice the zucchini lengthwise into thin slices. Arrange them on a baking tray lined with parchment paper, make 3 groups, each group formed by 3 slices placed side by side and slightly overlapping.
Fill each zucchini rectangle. On each “strip” add salt, grated Parmesan (use a coarse grater), provola cut into pieces, breadcrumbs and a drizzle of oil.
Place under the grill until they become golden on top, cook for about 7-8 minutes.
When they are warm/cool, fill with mozzarella, sliced avocado and speck, sandwich the rectangles together and if you prefer, return to the hot oven for a few minutes.
