Ingredients
- 14 oz pasta
- 3/4 cup ricotta
- 7 tbsp basil pesto
- 3.5 oz speck
- 1 1/3 cup smoked scamorza
- grana (grated)
- extra virgin olive oil
- salt
Preparation of baked pasta with pesto, ricotta and speck
Cook the pasta in plenty of salted boiling water for a few minutes less than the cooking time indicated on the package.
In a bowl, mix the ricotta with the pesto and a drizzle of extra virgin olive oilCut the scamorza into cubes and crumble the speck.
Drain the pasta, keeping a little of its cooking water.
Pour the pasta into the bowl with the ricotta and pesto mixture, add a little of the reserved cooking water and mix thoroughly.
Add the scamorza cubes and the crumbled speck and mix again.Transfer everything to a baking dish, level it and sprinkle with some grated Grana.
Bake in a conventional oven at 356°F for twenty minutes.
Remove from the oven, let cool slightly and serve your baked pasta with pesto, ricotta and speck.
