In this recipe, we will use oat flour, an excellent alternative to the more common flours that are often too processed and less beneficial for our body.
The great thing about oat flatbreads is that once cooked, they become very soft discs that we can fill as we please with any ingredient! Their texture also allows us to roll them without the risk of breaking.

Ingredients
For the oat flatbreads
- 1 3/4 cups oat flour
- 1 2/3 cups water
- 1 pinch salt
- to taste extra virgin olive oil

Steps
To make the oat flatbreads
To start, perform these simple steps: in a large bowl, pour in the oat flour along with the water and mix everything together. Then add a tablespoon of extra virgin olive oil, the water, and salt, and mix everything again.
At this point, heat a non-stick pan greased with oil and pour in a ladleful of the mixture, making sure to cover the entire cooking surface. Allow it to cook for a few minutes, and once the flatbread has solidified, turn it over.
Once turned, let it cook for a few more seconds, and then move the cooked flatbread to a plate. Repeat the previous step until you have used up all the mixture.
To finish, garnish your flatbreads with the ingredients you prefer. To stay healthy, in this example, I used cottage cheese, tomato, and baked eggplant!
Tip!
Leftover oat flatbreads can be stored for a couple of days in the fridge and heated when needed before consumption.
