  • 2 zucchini (medium-sized)
  • 1 teaspoon salt
  • 1 white onion
  • to taste extra virgin olive oil
  • 4 tablespoons chickpea flour
  • 1 canned tuna
  • 2 tablespoons water

Steps

To make the zucchini, tuna, and chickpea patties in an air fryer

  • First, start by cutting the zucchini into julienne slices using a suitable vegetable cutter. Then, squeeze the zucchini with your hands to remove excess liquid.

  • Next, chop the onion and after heating a good amount of oil in a pan, sauté it together with the zucchini, letting everything soften for about 5 minutes with the lid on.

  • To complete, transfer the mixture into a large bowl and add the chickpea flour, tuna, and water, mixing everything well. You should get a soft dough with which to create balls with your hands. Place the balls in the air fryer basket lined with parchment paper.

  • Finally, cook the patties for the first 20 min. at 340°F, then flip each patty and finish cooking for another 5 min. at 340°F. Serve your patties with a side of yogurt sauce and sautéed broccoli, for example.

Tip!

Pay attention to the consistency of the dough. It should be quite soft and not too dry. Balance the amount of flour and water well.
