Today in our kitchen, we propose baked sweet potatoes, also known as American potatoes, a type of potato grown in tropical regions, with a reddish color, a sweet taste, and rich in starch. Sweet potatoes are a very simple recipe to prepare, but worth trying; they are a simple and tasty side dish, alternative to the traditional yellow or red potatoes. It’s a side dish that pairs well with various types of dishes, such as meat, fish, or mixed dishes. This vegetable is also used in cooking for the preparation of sweets or for flour production. This is a very simple dish, which you can enrich with the spices you like best because their sweet taste lends itself to many combinations. This dish prepared by us is presented with the traditional recipe, but as already mentioned, onions and other aromas can be added as desired. This recipe was given to me by a dear friend, try it in your kitchen too!

- 2.2 lbs sweet potatoes
- 2 tablespoons olive oil
- 4 sprigs parsley
- to taste fine salt

Steps for Baked Sweet Potatoes
To prepare this side dish, start by peeling the sweet potatoes. Sweet potatoes are very hard tubers, peel and cut them carefully. Wash and dry them with a kitchen towel.
Cut the potatoes into not too large pieces and place them on a baking sheet lined with parchment paper. If desired, add one or two finely chopped golden onions. Add olive oil, salt, and washed, dried, and finely chopped parsley.
Bake in a preheated oven at 392°F for at least 1 hour. Check the consistency with a fork. They should not be too soft.
Serve immediately.
