Homemade Crunchy Streusel

What is streusel? The crunchy streusel is a coarse, crumbly mixture made with rice flour and almond flour, so it is also gluten-free. It’s a basic pastry recipe in my opinion because it is perfect for many desserts.
Homemade streusel can be used to enrich cheesecakes, fruit cups, yogurt or soft cakes, giving that crunchy note that makes every dessert even more tempting.

The streusel recipe is very easy and keeps in the refrigerator for 7–9 days, remaining fragrant and crunchy.
With these amounts you get about 170 g of streusel (about 6 oz), equal to 8–9 tablespoons, perfect to top 4 dessert cups or to make the base of an 8-inch cheesecake.

Thanks to its crunchy texture, streusel is perfect for completing many desserts. Below you will find some of my recipes where you can easily add it to give desserts a delicious crunchy touch (I must confess I eat it by the spoonful).

Homemade crunchy streusel

Ingredients

  • 1.8 oz (about 1/3 cup) rice flour
  • 3.5 tbsp (≈1/4 cup) butter
  • 1/2 cup (about 1.8 oz) almond flour
  • 1.8 oz (about 1/3 cup) powdered sugar
  • to taste ground cinnamon

Tools

  • Baking pans
  • Parchment paper

Steps

  • In a bowl, mix the dry ingredients.

    Add the cold butter cut into pieces and work it with your hands, combining it with the flours and the sugar until you have crumbs of different sizes.

  • Place the crumbs on a baking tray lined with parchment paper and bake in a preheated oven at 338°F until you see them turning golden as shown in the photo.
    After about 5 minutes, stir the mixture and return it to the oven for another 5–6 minutes, adjusting the time according to your oven.

  • You will notice a pleasant hint of cinnamon (and I say this even though I’m not particularly fond of this spice). Once the oven is off, let the streusel cool completely before using it in your preparations.
