Quick strawberry sauce
When you have strawberries and want to make something simple but really useful, this strawberry sauce is the perfect solution. It’s made in a few minutes in a pan and is ideal to accompany desserts, yogurt or ice cream.
It’s also known as strawberry coulis: a smooth, fragrant and slightly syrupy sauce, perfect at this time of year.

Tips
If you want it sweeter, add another tablespoon of sugar.
If you want it looser, add a tablespoon of water while cooking.
Great both warm and cold.

How to use it?
This easy strawberry sauce is perfect to accompany cheesecakes, a bowl of fruit, served over ice cream, or to moisten layers of sponge cake when making a fruit cake!

Ingredients

  • 1 1/2 cups strawberries
  • 2 tbsp sugar
  • 1/2 lemon (juice only)

Steps

  • Wash the strawberries, pat them dry with kitchen paper, remove the stem and cut them into pieces.
    Put the strawberries in a saucepan together with the sugar and the lemon juice.

  • Place everything in a saucepan, set over medium heat and cook for 5–7 minutes, stirring occasionally with a rubber spatula.
    Allow the strawberries to slowly release their juice and become soft.

  • At this point you can choose whether you prefer a smooth, homogeneous sauce and blend the mixture, or a more rustic one with whole pieces and do nothing more.
    If you don’t like the small strawberry seeds you can pass the sauce through a sieve to make it silkier!
    On a cheesecake it’s out of this world!

Can it be made without sugar?
Yes, you can omit it or replace it with honey or another sweetener of your choice.

How long does it keep?
In the refrigerator for 2–3 days in a closed container.

Can it be frozen?
Yes, better if already blended and smooth; it keeps in the freezer for about 1–2 months. I personally put it in an ice cube tray!

Can I use it warm?
Yes, it’s also great warm, especially over scoops of ice cream or freshly made desserts like cheesecake.
