Sauteed Green Beans with Cherry Tomatoes and Prosciutto

I was craving green beans, which I really like but don’t cook often, so I thought of turning them into a simple and tasty one-dish meal. I also added a hard-boiled egg and it became my dinner today, while Andrea is on a business trip.
An easy and quick idea, perfect when you don’t want to spend too long at the stove but still want something light and flavorful. Sauteed green beans in a pan with cherry tomatoes and prosciutto are a side dish that easily turns into a complete meal, ideal even for warmer days.
They are prepared in just a few minutes, because vegetables are best when they remain tender but still crisp, both in flavor and nutritionally.

Ingredients

  • 1 2/3 cups green beans
  • 6 cherry tomatoes (halved)
  • 2 oz prosciutto (cured ham)
  • 1/2 onion
  • 1 clove garlic
  • 3 tablespoons extra virgin olive oil
  • to taste salt
  • to taste pepper

Steps

  • Trim the green beans, wash them and cook them in boiling salted water for about 10 minutes, until they are tender but still firm. Drain them and set aside.

  • In a nonstick pan pour a drizzle of extra virgin olive oil, add thinly sliced white onion and sauté it for a few minutes until it becomes soft and golden.

  • Then add the washed and cut cherry tomatoes: let them cook for about 5–6 minutes, stirring, until they begin to soften and release their juices.

  • Add the boiled green beans and sauté them for a few minutes so they absorb the flavors well.
    Finally add the prosciutto cut into strips, stir and let it go for another minute.

  • Turn off the heat, adjust salt and pepper to taste if necessary, and serve.

    With a hard-boiled egg or a fresh mild cheese, they make the perfect one-dish meal for summer!

Tips for sauteed green beans

How do you store sauteed green beans?
They can be kept in the refrigerator for up to 1 day, clearly stored in an airtight container. Before serving they can be eaten cold or lightly reheated.

Can I use frozen green beans?
Yes, absolutely — frozen green beans can also be used! Just cook them in boiling water for a few minutes longer than fresh ones, then drain them well before sautéing.

Can I substitute the prosciutto?
Certainly, you can also use speck or lean pancetta. For a lighter version you can omit it entirely and adjust the seasoning.

Should the cherry tomatoes be cooked or left raw?
In this recipe they are cooked directly in the pan with the onion, so they release their juices and make the dish very flavorful.

Can they be prepared in advance?
Yes, they can be prepared ahead of time and stored in the refrigerator in containers or covered with plastic wrap. They are also excellent cold, perfect for summer.
