Strawberries Melba with whipped cream are a simple, fresh and very quick dessert to prepare, perfect when warm weather arrives and you want something sweet without turning on the oven.
With ripe strawberries, ice cream and a touch of whipped cream, it’s ready in a few minutes and is always a guaranteed delight.
I saw the recipe on a French-language cooking blog and took the opportunity to use some strawberries I’d bought in abundance that… were about to give up the ghost!

Ingredients
- 14 oz strawberries (about 2 2/3 cups)
- 4 scoops vanilla ice cream (scoops of ice cream (or cream / fior di latte flavor))
- 7 fl oz heavy cream (for whipping) (about 3/4 cup)
- 2 tbsp pistachio crumbs
- to taste strawberry coulis
- to taste powdered sugar (optional, to sweeten the cream)
- to taste mint (for decoration)

Steps
Wash, hull and halve the strawberries:
Whip the very cold cream, sweetening it to your liking.
Place some strawberries in the glass or chosen bowl, add the ice cream, more fruit and the coulis.
Top with the whipped cream and a sprinkle of pistachio crumbs.Garnish with a small mint leaf and serve immediately!
I had no kitchen help and, between preparing and photographing, the ice cream melted slightly. The final presentation isn’t as perfect as I would have liked, but the dessert is fresh, very quick and truly delicious!

Yes, but be sure to thaw and dry them well before using; you can also place them in a sieve but keep the juice!

Of course — you can omit it or replace it with yogurt or a mascarpone cream.

In my opinion the best are vanilla, fior di latte or yogurt: they are perfect because they have a gentle, not-too-intrusive flavor that enhances the taste of the strawberries.
