The soft yogurt and chocolate cake is a delicious pantry cake, easy and quick to make.
Very soft, with a slightly crunchy and delightful top, it can be prepared in about ten minutes using only one bowl and a spoon, and it’s perfect for breakfast, an afternoon snack, or even as a light dessert.

Ingredients
- 2 eggs
- 1/2 cup + 2 tbsp (120 g) granulated sugar
- 1 cup (250 g) plain yogurt
- 1/3 cup (80 ml) vegetable oil
- 1/2 cup (about 80 g) chocolate chips (plus a handful for decoration)
- 1 2/3 cups (200 g) all-purpose flour
- 1 packet vanillin (vanilla flavoring)
- baking powder
- brown sugar (for decoration)
Preparation of the soft yogurt and chocolate cake
In a large bowl pour the eggs and the sugar and stir with a spoon until you obtain a homogeneous mixture.
Add the yogurt, the vegetable oil, the vanillin and mix again until you have a smooth cream.
Add the sifted flour and stir to incorporate it.Also fold in the sifted baking powder and then add the chocolate chips.
Line an 8 2/3-inch (22 cm) cake pan with parchment paper and pour in the prepared batter.
Sprinkle the surface with a few tablespoons of brown sugar and a handful of chocolate chips.Bake in a preheated conventional oven at 356°F for thirty-five minutes, performing the toothpick test: a toothpick inserted into the cake should come out dry; if not, extend the baking time.
Remove from the oven, let cool completely in the pan, transfer your soft yogurt and chocolate cake to a plate or serving tray and serve.
