Ingredients
All you need is a few leftover slices of panettone, even from different brands. Avoid those already filled with creams.
- Some slice panettone
- 1 cup ricotta
- 3 oz dark chocolate chips
- 3 tbsp sugar
- 3.5 oz extra dark chocolate
- 2 tbsp butter
- as needed powdered sugar
- Some raspberries

Steps
Here’s how to make the Christmas Yule Log.
Cut the leftover panettone and arrange the slices on plastic wrap to create a roughly rectangular shape. Place a sheet of parchment paper on top, then use a rolling pin to flatten the panettone slices. Trim the edges to give a more regular shape.
In a bowl put the well-drained ricotta, the sugar and the chocolate chips, then mix well. Spread the ricotta cream over the panettone rectangle. When you have covered the entire surface, help yourself with the plastic wrap and roll it up, creating a cylinder. Seal with plastic wrap and chill for at least one hour in the fridge.
After the time has passed, place the dessert on a work surface, remove the plastic wrap and cut the cylinder diagonally. Position the smaller piece next to the larger one to create the typical log shape. Melt the chocolate in a bain-marie (double boiler), add a pat of butter and, while still warm, pour it over the log. Put it in the fridge for no more than 10 minutes, then take it out and use the tines of a fork to score it, simulating the bark striations of the log.
Remove the parchment paper from underneath and gently transfer the log to the serving plate. Decorate with powdered sugar. Arrange a few raspberries scattered around to create a color contrast. The Christmas Yule Log is ready.
Storage
Once prepared, the Christmas Yule Log keeps in a cool, dry place for two to three days.
Another idea
You can make the same dessert using leftover pandoro. The preparation is the same. And if you can’t give up the taste of chocolate, you can also replace the ricotta with a chocolate spread.
