The banana and yogurt loaf cake without eggs is a perfect dessert for breakfast or a snack. Soft and delightful, it is made with ripe bananas, yogurt, flour and sugar. In short, simple ingredients that we all have at home. My recipe is a butter-free version, also called “Banana Bread”, and it’s an excellent recipe for using up ripe fruit. Ingredients
- 1 1/3 tbsp vegetable oil
- 1/2 cup plain yogurt
- 3/4 cup sugar
- 2 cups all-purpose flour
- 2 1/2 tsp baking powder
- 1/3 cup chocolate chips
- 1/3 cup milk
- 2 bananas

- 1 Loaf Pan
Steps
Mash the bananas in a bowl until you get a puree, then add the oil, the yogurt and the sugar. Stir in the flour, the baking powder and half of the chocolate chips and mix everything well.
Pour the batter into a greased and floured loaf pan and top with the remaining chocolate chips, then bake in a preheated conventional (non-fan) oven at 356°F for 40 minutes.
Storage
The banana and yogurt loaf cake can be kept under a cake dome for up to 3 days, or alternatively it can be frozen.
Tips
If you don’t like chocolate chips, you can top the loaf with dried fruit or nuts such as pecans, chia seeds, wheat germ, chopped hazelnuts or crushed pistachios.
