Today we make a delicious Quick No-Yeast Focaccia. This is a speedy version made with instant leavening agent. This focaccia is perfect when you’re in a hurry to prepare dinner or need a quick snack. It’s one of my favorites; it always pleases everyone in the family — it’s truly irresistible, one slice leads to another.

Ingredients
- 4 cups all-purpose flour (type 00)
- 4 tsp instant baking powder (for savory preparations)
- 1 tsp sugar
- 1 1/3 tbsp extra virgin olive oil
- 1 cup water (warm)
- 1 2/3 tsp salt
- 1 onion
- 10 cherry tomatoes
- to taste oregano
- 5.3 oz mozzarella

Steps
To prepare this recipe, start by pouring the flour into a mixing bowl.
Make a well in the center and add the baking powder and sugar, then mix with a fork. Next add three or four tablespoons of extra virgin olive oil, then incorporate the salt and add the water little by little.
Work the dough until you obtain a smooth ball (let it rest for 20 minutes)
Spread the dough with your hands in a well-oiled baking pan, top with sliced onion and halved cherry tomatoes, and bake in the oven at 374°F for about 30-35 minutes in the middle of the oven.
Remove from the oven and top with the mozzarella. As a final step, return to the oven until the mozzarella has melted.
Take out of the oven and enjoy hot and gooey!
Storage for Quick No-Yeast Focaccia
The Quick No-Yeast Focaccia can be stored in a paper bag at room temperature for up to 2 days, alternatively you can also freeze it. If you can’t find instant baking powder, you can use fresh yeast, but in that case you’ll need to let the dough rise for at least 2 hours.
