The recipe for pan-fried broccoli flatbreads is made without eggs and is very easy to prepare.
To avoid eating broccoli the same way all the time, I suggest this tasty and light alternative made with boiled and blended broccoli, type 2 flour and Greek yogurt, which makes them soft and allows us not to use eggs.
Suitable both for a quick brunch and for a buffet, they also look nice thanks to their green color that evokes spring! (Although it’s a recipe you can make all year round).
They take just a few minutes to prepare and a couple of minutes per side to cook in the pan. I used the Bimby to boil the broccoli while I did other things, and then I used it to finish the recipe, but as you’ll see they can be made by hand very easily.

- 2 1/2 cups type 2 flour

Steps
Boil the broccoli florets in salted water, or steam them, and blend. (They must be very soft). In the Bimby: 212°F – speed Soft – counterclockwise – 12–15 min. Then blend 25 sec./speed 8.
Put all the ingredients into the Bimby bowl and then blend for 20 sec./speed Dough.
Move the dough to a lightly floured work surface, roll it out and cut into the desired size (on average the diameter of a drinking glass is sufficient). Create dimples with floured fingers or with the handle of a wooden spoon.
Lightly oil the pan, and cook the flatbreads for about 2 minutes per side, covering with a lid.
Before flipping the flatbreads, lightly brush the surface. Fill as desired and serve hot or cold.
Hand mixing
Blend the boiled broccoli and place them in a bowl. Let them cool slightly, then add the sifted flour and baking powder and finally mix in the yogurt and oil. Check the seasoning and, if necessary, add a little fine salt and a grating of black pepper. Compact the dough and then proceed with rolling and cooking.
Tips:
Flour absorption can vary so you may need a few extra tablespoons. The final dough should not be sticky.

How can they be filled?
They can be filled with cherry tomatoes, arugula and Parmesan shavings, or with sun-dried tomatoes and stracciatella. They also pair wonderfully with smoked salmon or with chickpea hummus.
Can I use regular plain yogurt?
Yes, but since it is slightly less thick than Greek yogurt, you may need a bit more flour.
Can the flours be changed?
You can use 00 or type 1 flour. I’m not sure about other flours; you would need to experiment.
