Chicken meatloaf in the air fryer is a simple and light main course. Ingredients

  • 10.6 oz (about 2/3 lb) chicken breast
  • 1 cup ricotta
  • 3/4 cup (about 2.8 oz) breadcrumbs
  • to taste parsley
  • to taste salt
  • 3 heads radicchio
  • 1/2 onion
  • to taste salt
  • as needed extra virgin olive oil

How to make the chicken meatloaf in the air fryer

  • Let’s start preparing the chicken meatloaf in the air fryer. Clean the radicchio: remove the tough end of the stem and chop it into pieces. Clean the onion and chop it. Pour some extra virgin olive oil into a pan, add the onion and the chopped radicchio, cook for about 10 minutes or until softened, then season with salt and let it cool.

  • Remove any fat and small bones from the chicken breast and cut it into pieces. Put the chicken pieces, ricotta, a pinch of salt, the breadcrumbs and the parsley into a blender. Blend everything until the chicken becomes a smooth paste and there are no more pieces.

  • Take a piece of parchment paper, lay it on the work surface and put the chicken mixture on it. Spread it with your hands to form a rectangle, place the radicchio in the center, close the meatloaf using the parchment paper and shape it tightly, then twist the paper ends like a candy wrapper.

  • Place the meatloaf wrapped in the parchment paper into the air fryer basket. Cook at 338°F for 15 minutes. Open the air fryer basket and unwrap the parchment so the meatloaf can brown; then cook at 374°F for 5 minutes.

  • Once the meatloaf is cooked, remove it from the air fryer basket and let it cool so that when sliced the pieces are perfect. Reheat for a few minutes before serving if desired.

How to store cooked chicken meatloaf from the air fryer

You can keep it in the refrigerator for 2-3 days; you can also freeze it for a few months.
