Coconut bites without butter, delightful quick and fragrant little pastries baked in the oven. Soft inside, lightly golden outside and with a delicious dark chocolate base, they are ideal to offer to friends or to enjoy with a good coffee. In addition, they can be prepared in just a few minutes with simple ingredients that we often already have at home. Making them is very easy… and finishing them even more! Ingredients
- 1 1/2 cup shredded coconut (desiccated)
- 2 eggs
- 6 1/2 tbsp granulated sugar
- 1 pinch salt
- 1/3 cup all-purpose flour (sifted)
- vanilla extract
- 2 oz dark chocolate (for coating)
Preparation
In a bowl, beat the eggs with the sugar, the shredded coconut, the sifted flour, the chosen flavoring (vanilla) and a pinch of salt until you obtain a homogeneous and well combined mixture.
Transfer the dough into a piping bag fitted with a large star tip and distribute the mixture into paper liners, gently pressing the bag.
Finish all the dough, place the liners on a baking sheet and bake in a preheated oven at 356°F for about 10 minutes, until lightly golden. Remove the bites from the oven and let them cool completely.
Meanwhile, melt the dark chocolate (chopped into pieces) in the microwave or in a bain-marie. Remove the bites from the liners, dip the base into the melted chocolate and let the excess drip off.
Arrange the bites on a tray lined with parchment paper and let the chocolate set in the fridge for 20-30 minutes. If desired, repeat the dipping to obtain a thicker chocolate layer.
