On this cold and quiet late-January Sunday I want to share the recipe for a simple and delicious main course: Braised Chicken in a Skillet. A delightful and flavorful sauce coats the chicken, making it very tender and tasty — and don’t forget to prepare a few slices of bread because it will be impossible not to mop up the sauce. To prepare this dish I used chicken drumsticks, but you can also use other parts of the chicken, even a whole chicken cut into pieces. Ingredients for Braised Chicken in a Skillet

  • 8 chicken drumsticks
  • 14 oz peeled tomatoes
  • 1 stalk celery
  • 1 onion
  • 1 carrot
  • 2 1/8 cups vegetable broth
  • 3 oz pitted black olives (pitted)
  • 4 tbsp extra virgin olive oil
  • 5 leaves bay leaves
  • to taste salt

How to prepare Braised Chicken in a Skillet


  • Clean the carrot and cut it into small cubes. Wash the celery stalk and cut it into small cubes as well. Peel the onion and cut it into cubes. Pour the EVO oil into a large saucepan and add the chopped vegetables and the chicken drumsticks.


  • Let the chicken brown over medium heat for 5 minutes, turning the drumsticks with a wooden spoon. Add the peeled tomatoes, breaking them up, and mix well. Also add the bay leaves.

  • After 3-4 minutes of cooking, pour the hot vegetable broth into the saucepan. Cover with a lid and let the braised chicken cook for about 50 minutes.
    Halfway through cooking, add the pitted black olives to the chicken.

For a more flavorful dish you can also add two tablespoons of capers and a hot chili pepper.
