Today I want to tell you about a recipe I prepared for Valentine’s Day: Chocolate Pudding. I saw this recipe on a friend’s Instagram page and immediately decided to try it. What can I say… wonderful! A very simple and very quick recipe, perfect even for the most clumsy in the kitchen but truly special. No flour is needed, only a little potato starch which also makes it “gluten-free” so it’s perfect for those who cannot consume gluten. In just a few minutes with a few simple ingredients you probably already have at home, you can make a delicious dessert that will delight the little ones and more! Ingredients
- 1 cup whole milk
- 1/4 cup unsweetened cocoa powder
- 2.5 tbsp potato starch
- 3.25 tbsp granulated sugar
How to prepare the Chocolate Pudding
Put the sugar, potato starch and unsweetened cocoa powder into a saucepan. Add the milk little by little, stirring with a whisk. Place the saucepan over medium heat.Bring to a boil, continuing to stir with the whisk to prevent lumps from forming. Cook the Chocolate Pudding for 2-3 minutes, allowing it to thicken.
Pour the pudding into two molds or small bowls and let it cool first at room temperature and then in the refrigerator for at least 30 minutes. For an even more indulgent pudding, add a dollop of whipped cream or a scoop of vanilla ice cream before serving.

Variations and Tips
For a lighter pudding you can replace whole milk with partially skimmed milk; the pudding will still be delicious. For a lactose-free version you can use lactose-free milk or a plant-based milk such as soy, almond or rice milk.
For a unique flavor, add a pinch of hot chili powder.
